Chicago: Butcher Trainer to the World
Kari and her James Beard Award nominated book: The Art of Beef Cutting

Did you all catchthis fantastic article in the New York Times Magazine? Craft butchery has been popping up all over the country in recent years, and Chicago's no different. Kari Underly, of Range Meat Partners andGrrls Meat Camp, shared her plans for a comprehensive craft butchering academy at the Good Food Financing Fair this year. Bob Benenson's blog post checks in about her exciting plans. All 15 farms and food businesses from this year's Financing Fair, including Underly's Range Meat Academy, are actively seeking funds. We hope to exceed the results from last year's conference, whose participants have since raised over $3 million! Read more about Kari and her plans for a Chicago based craft butchering academy here!
